To each his own Olive Oil

Our Extra Virgin Olive Oils are extremely fragrant and mild! We classify our olive oils into three intensities: Mild, Medium, and Strong. These intensities are obtained from different varieties harvested at different stages of ripeness. Our olive oils are packaged in 50cl; 75cl; 1.5L; 3L; and 5L bottles.

Mild Oils

The Moulin DOUX Cuvée The Lucques Selection and Elixir No. 1 are the Moulin's oils harvested at their peak of ripeness. There is no bitterness, no peppery sensation, just balance and sweetness. These oils are best used cold pressed and are ideal for new consumers of quality olive oils.

Medium Oils

La Cuvée du Moulin Intense La Sélection Aglandau and Elixir No. 2 These oils are made from olives harvested in their mid-rotation (between green and black). ​ There is no bitterness, just a hint of pepper, perfectly balanced with a long, lingering aftertaste. ​ These oils can be used both cold and for cooking; they have a rich aroma and flavor. These are our favorite oils.

Our Strong Oil

Picholine Selection

This oil is made from olives harvested almost entirely green. There is a hint of bitterness, a peppery note, and a finish of cut grass. It can be used cold or for cooking; it has a rich aroma and flavor. This oil is perfect with tomatoes and mozzarella, or dishes with character: lamb's lettuce, mature goat cheese, ratatouille, etc.

We produce a wider range of Extra Virgin Olive Oils. With 12 olive varieties, we produce 15 different oils. In addition to the intensity, we must consider the aromas specific to each variety and therefore to each bottle. In addition to this, we also produce tapenades, soaps, and especially Lucca Olives: olives for aperitifs, the specialty of our region.
