Olive Harvest Table olives are harvested one by one by hand. Selecting the olives from the tree, then sorting and grading, the olives undergo a debittering phase before being brined and stored in a cold room.


THE LUCQUES
The Lucques is an extraordinarily tasty olive. This green diamond is known in the south as the "Rolls Royce of Olives." With crisp, buttery flesh and aromas of avocado and hazelnut, the Lucques is one of the most popular table olives. Prepared with only water and salt, this olive reveals all these aromas.
PICHOLINES Olives with slightly woody flesh, very aromatic. They grow on large, vigorous, and highly productive trees. Picholines are crisp, and their flesh easily separates from the pit and melts in the mouth. Picholines are harvested exclusively by hand; we select only the largest olives.
