Olives Pastes

Our Olive Pastes can be used like Tapenades, on toast as an appetizer, or in cooking. If you're familiar with Tapenade, that delicious local specialty made with capers, anchovies, garlic, and olives, try our Olive Pastes too; The difference? It doesn't contain anchovies. The Green Olive Paste, homemade, is made solely with Green Lucques olives, a little pepper, and olive oil from the mill. For the Black Olive Paste, we use ripe olives, which have a more pronounced flavor, enhanced with a few capers, but still no garlic or anchovies.
